Chicken, Stir Fried Rice and Veg - another Ninja Foodi recipe

Here’s anther recipe for the Ninja Foodi max.
To begin this recipe there is a little preparation necessary.

Firstly you will need some cooked rice. A recipe for this is available elsewhere in this forum. The rice is used from frozen.

You will also need some barbecue sauce, a simple but tasty recipe follows:

Barbecue sauce. (BBQ Sauce)

INGREDIENTS
5 tbsp tomato ketchup
1 tsp mustard
1 tbsp treacle
1 tbsp syrup
2 tsp Worcester Sauce
1 tsp smoked paprika
1 tsp salt

Stir the above ingredients together.
Transfer to a storage jar.
Use for dipping, glazing a roast or on your favourite burger.

Put a few tablespoonsful in a bowl for basting the chicken in this recipe.

The next step is to prepare the veg and fried rice.
We used 1/3 this recipe (for two)

INGREDIENTS

360g cooked rice
a little turmeric

For Stir Fry:
1 knob of butter
1 tbsp sunflower
2 tbsp unsalted butter
160 g diced onion
1 tbsp minced garlic
1 tsp minced ginger
3 whole eggs, (lightly beaten)
273 g mixed vegetables
2 tbsp Shaoxing wine, (or use dry sherry) [beer]
1 tbsp oyster sauce
58 g soy sauce, (Note: I used 3 teaspoon extra)
½ tsp salt, (or use more according to your liking)
black pepper, (to taste)

Into the Ninja with a mug of water:
3 washed, top and tailed carrot
a handful of frozen green beans
a red pepper, de-seeded

Pressure cook on Hi for 10 minutes, natural release
Drain and dry Ninja bowl.

Split carrot into four lengthwise then cross cut to dice. Put in a bowl.
Cut green beans into short pieces and add to bowl.
Slice red pepper add to bowl.
Chop a couple of mushrooms, add to bowl.
Add a handful of raisins or sultanas.
Add frozen peas.

STIR FRY:
Add oil and butter to Ninja bowl.
Select “Saute” on setting 3.
When it is hot, add onion, garlic, and ginger, cook, keep stirring until just translucent and fragrant.
Add vegetables from bowl and cook through.

Push all the ingredients to the side to make room for the eggs.
Add beaten eggs into the pot, cook until the top surface of the egg has thickened.
Then, flip the egg and cook until it’s set on that side, too then break it apart.
Push the egg to the side together with the vegetables to make room for the rice.
Melt 2 tablespoons of butter to the pot, then add the cooked rice.
Stir and mix the rice with the other ingredients.

Add sherry or beer, soy sauce and oyster sauce.
Keep stirring and adjust seasoning with additional soy sauce or oyster sauce if desired (use an increment of 1 teaspoon each time).
Transfer the fried rice to a clean bowl, cover and put in a warm oven until the chicken is done.

NOTES
To add saltiness to the dish, just add a small amount of salt.
Do not go overboard with soy sauce or all you’ll taste is soy sauce.
Butter and oil vs oil only? Use a combination of butter and oil for less greasy fried rice.

Ninja Foodi Chicken Thighs

These Ninja Foodi chicken thighs are rubbed with seasoning, basted in BBQ sauce and cooked to moist, juicy perfection! Full of flavor and ready in about 20 minutes.

PREP TIME 5 minutes
COOK TIME 12 minutes
TOTAL TIME 17 minutes
SERVES 4

INGREDIENTS
4 boneless skinless chicken thighs (you can use skin-on as well)
1 teaspoon salt
1 1/2 teaspoon brown sugar
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 cup BBQ sauce (see simple recipe above in the first post)

INSTRUCTIONS

  1. Preheat the Ninja Foodi to 190°C on Air Crisp.
  2. Season the chicken by rubbing the salt, brown sugar, smoked paprika, and black pepper all over the chicken thighs.
  3. Place the chicken thighs in the air fryer basket in a single layer and cook on Air Crisp for 10 minutes, flipping the chicken thighs halfway through cooking.
  4. Remove the basket from the base and baste chicken with BBQ sauce on both sides.
    Place chicken thighs back in the air fryer and cook on Air Crisp for an additional 2 to 4 minutes.
  5. Remove them from the air fryer and enjoy! Chicken thighs are done cooking once they reach an internal temperature of 75°C.

NOTES

HOW TO REHEAT CHICKEN THIGHS IN THE NINJA FOODI:

  1. Preheat your Ninja Foodi on Air Crisp to 180°C.
  2. Cook leftover chicken thighs for about 3 minutes until warmed thoroughly.

HOW TO COOK FROZEN CHICKEN THIGHS IN THE NINJA FOODI:

  1. Preheat your Ninja Foodi air fryer to 190°C on Air Crisp.
  2. Rub the frozen chicken with the spice mixture in above recipe using a little oil if needed.
  3. Cook the chicken thighs for 15 to 20 minutes, flipping the chicken halfway through.
  4. Baste chicken with BBQ sauce on both sides, then cook for an additional 2 to 4 minutes.
